Even now when our topics/themes are usually taken from the children's interests, we still provide topics from time to time (such as now we are doing caterpilalrs and butterflies, which they love, but wouldn't necessarily have thought of themselves). So in the summer at some point will do Water, as I love teaching the children about the water cycle, which we make into a big display.
