"Developing Early Years Practice" by Linda Miller et al, published by David Fulton has a very useful chapter on Learning and Developing from Birth to Three and there's also "Key times for play" by Julia Manning-Morton and Maggie Thorp which looks at all the theory behind good provision for 0-3s.
